Catching up with my results, starting with October's challenge for Pumpkin Whoopie Pies with Cream Cheese Filling (from Baked via Martha).
I was really excited when Alicia suggested this recipe for October. It seemed like the perfect trifecta of pumpkin, cream cheese, and Eric (the Baked pastry chef who I found the least crazy/most likable of all the cheftestants on Top Chef: Just Desserts).
As seen from the picture, mine came out looking more like pumpkin sliders than pumpkin whoopie pies. They were very moist and flavorful, and I liked that the cream cheese filling wasn't overly sweet—it was a good complement to the cakey cookie part. I found the spices maybe a bit too strong, and though this was definitely not a deal-breaker, I do think that the pies tasted better the next day after having some time to mellow out in the fridge.
I actually ended up making another batch during Thanksgiving break at my parents' house. Experimented with reducing the cloves and ginger by a third, and I think that adjustment worked out nicely—the spices still came through, but not in a distracting kind of way.
Next time, I'll have to try making a batch with chocolate chips!
