apricot-almond (and coconut craisin) granola

Here are my results for February:


I made this last night and had it for breakfast today with french vanilla yogurt. My first-ever attempt at homemade granola—not bad!

I like that this recipe is non-fussy and easy to tweak as needed. As you may know, I'm not a fan of raisins, so I replaced that ingredient with unsweetened shredded coconut. I also swapped out the dried cherries for dried cranberries infused with blueberry juice, and the honey with Sheep's new favorite, agave nectar. The mixture smells really good when you stir it all together.

I do agree with one of the MyRecipe commenters that the end product was a bit bland, so I probably wouldn't eat this plain (quite good with the yogurt, though). Next time I'll probably heed the suggestion to add cinnamon—and maybe a touch of brown sugar? I also like the idea of topping Greek yogurt with the granola, sliced bananas, and a drizzle of agave . . . tomorrow's breakfast, perhaps? :)
